A small bunch of herbs: mint, parsley, basil, and dill are all nice Salt and Pepper to taste Method: Boil a kettle. Tip the couscous into a large bowl, crumble in the stock cube, then add the turmeric, cinnamon and dried fruit, and season well. Pour over 500ml boiling water, give everything a quick stir, then cover with cling film and leave for 5 mins. Cut up all your veg - diced into small pieces. Chop your herbs finely. Add all veg and herbs to a bowl and dress with the lemon or lime juice. Add 1 tablespoon of oil and mix all together. Add salt and pepper to taste. Cut up a handful of nuts to garnish. Use a fork to fluff up the couscous. Add your vegetable and herb mixture to the couscous and mix together. Tip onto a serving platter or bowl and scatter with the nuts and some more herbs.
