About the Recipe

50g long grain white rice

1 ½ tbsp cornflour

4 cups cold milk

100g sugar

¾ cup almond meal

1 ½ citrus zest

2 tbsp chopped nuts


EQUIPMENT NEEDED:

Large bowl

Saucepan

Measuring equipment

Whisk

Preparation

  1. In large bowl, mix rice and cornflour

  2. Add ¼ cup of milk and sugar, stir

  3. In a saucepan on medium high heat, add remaining milk, bring to a boil and add the cornflour paste just made.

  4. Reduce heat whisking for 10-15 mins

  5. Add almond meal and zest

  6. Stir for 5 more mins

  7. Place in cups and refrigerate until cool
