Kids Cooking: Golden Couscous
At Cultivating Community keeping kids connected with food and growing their confidence in the kitchen is a big part of what we love. While our After School Cooking program has been paused during COVID-19 outbreak, we've been busy making easy to follow recipes for all kids to get cooking at home.
Here's Georgia teaching you to make delicious, fragrant golden couscous.
Ingredients:
250g Couscous - for two people
1/2 vegetable stock cube or a tablespoon of stock powder
1 tsp turmeric
1/2 tsp ground cinnamon
a handful of dried fruit and nuts (sultanas, apricots, almonds)
1/2 small brown onion
Juice of 1 lemon or lime, or 1 tablespoon of vinegar
1 tbsp oil
Hot water - to cover the couscous
Capsium, cucumber and spinach or whatever veg you like!
A small bunch of herbs: mint, parsley, basil, and dill are all nice
Salt and Pepper to taste
Method:
Boil a kettle. Tip the couscous into a large bowl, crumble in the stock cube, then add the turmeric, cinnamon and dried fruit, and season well. Pour over 500ml boiling water, give everything a quick stir, then cover with cling film and leave for 5 mins.
Cut up all your veg - diced into small pieces. Chop your herbs finely. Add all veg and herbs to a bowl and dress with the lemon or lime juice. Add 1 tablespoon of oil and mix all together. Add salt and pepper to taste.
Cut up a handful of nuts to garnish.
Use a fork to fluff up the couscous. Add your vegetable and herb mixture to the couscous and mix together. Tip onto a serving platter or bowl and scatter with the nuts and some more herbs.
This can be a main or side dish - add humus, yogurt, chicken or fish!
