About the Recipe
Ingredients
Allergens: Gluten free, lactose free option. Nut free
3 tablespoons oil
3-4 potatoes, chopped
1 onion, diced
1 carrot, sliced
1 can diced tomatoes
1 green capsicum, diced
3-4 cloves garlic, finely chopped
Small bunch of coriander, finely chopped
2 tablespoons curry powder
1 teaspoon salt
Equipment needed:
tablespoon
knife
chopping board
big bowl
big pan or pot
wooden spoon
large pot
colander
Preparation
In a pot, add oil and onion and fry until golden brown
Add in tomato can and let it cook for 1-2 minutes
Add in potatoes, carrot, curry powder and salt then mix and let cook for 10-15 minutes. Or until the potatoes have softened
Add coriander, garlic and capsicum and stir for 15 seconds
Can be served with rice, bread or itself. Enjoy!
